St. Thomian Potato Pudding

Ingredients

  • 6 large potatoes
  • 2 Tbsp. oil
  • 1/4 c. onions, chopped
  • 1/4 c. green peppers, chopped
  • 1/4 c. celery, chopped
  • 1/4 c. capers
  • 1/4 c. Spanish olives, chopped
  • 1/2 c. raisins
  • 1 c. tomato sauce
  • 2 Tbsp. ketchup
  • salt and pepper to taste

Directions

    Boil potatoes.

    While potatoes are boiling, saute onion, green peppers and celery until wilted.

    Add capers, Spanish olives and raisins.

    Saute for a few more minutes.

    Do not let it get too brown.

    Add tomato sauce, ketchup, salt and pepper.

    Simmer for 20 minutes.

    Add a little water, if the sauce is too thick.
