- 6 10 inch tortillas, halved
- 2 lb ground beef
- 2 can enchilada sauce
- 3 cup Mexican cheese blend
- 1 can black beans, drained
- 2 cup frozen corn
- 1 avocado, pitted and diced
Directions

1Preheat oven to 350AF.

2In a large skillet, cook ground beef over medium heat until no longer pink; drain fat.

3Spoon 1/3 of enchilada sauce in a casserole dish and spread across entire bottom.

4Place 2 tortillas on top of the sauce over lapping some.

5Add a layer of half the black beans, then half of corn, half beef, and a cup of cheese.

6Add another layer of tortillas, sauce, beans, corn, beef, and cheese.

7Top with a final layer of tortillas and sauce.

8Then cover with foil.

9Bake for 20 minutes and remove foil.

10Add final layer of cheese.

11Resume baking for another 10 minutes or until cheese is golden brown.

12Let sit for 10 minutes then add avocado on top and serve.
