Standing Rib Roast Beef

- 1 standing rib roast
- salt and pepper
- garlic salt
Directions

1Rub the roast with seasonings and let stand at room temperature for 1 hour.

2Place in shallow open roasting pan with ribs down or on wire rack if boneless.

3Place in cold oven.

4Roast 1 hour at 375°.

5Turn off oven until 1 hour before serving.

6Turn oven back on to 375° for 30 minutes for rare, 40 minutes for pink and 50 minutes for pale pink (done).

7Let roast rest for 20 minutes before carving.
