Ingredients

  • 1 12 cups all-purpose white flour
  • 14 cup whole wheat pastry flour
  • 14 cup finely ground cornmeal
  • 1 12 teaspoons salt
  • 3 teaspoons baking powder
  • 12 cup butter, cold and cut into 1/4 inch cubes
  • 1 cup buttermilk
  • 14 cup flour (for dusting)

Directions

  1. 1
    Preheat oven to 425.
  2. 2
Line a baking sheet with parchment paper and set aside.
  3. 3
Whisk dry ingredients (except flour for dusting) in a large bowl.
  4. 4
Scatter the butter pieces over the dry ingredients.
  5. 5
Work in by rubbing fingers with the butter and the flour as if snapping thumb and fingers together until no pieces remain larger than a pea.
  6. 6
Make a well and add 3/4 cup of the milk.
  7. 7
    Stir until just combined.
  8. 8
If needed, add the rest of the milk.
  9. 9
Dust a dry surface with some of the reserved flour.
  10. 10
Using floured hands, turn the dough onto the surface and gently fold over a few times until the dough is workable.
  11. 11
Press out into a 1/2 inch thick round.
  12. 12
Using a floured, star-shaped biscuit cutter, cut out as many biscuits as you can.
  13. 13
Place cut biscuits on the parchment-lined baking sheet.
  14. 14
Reshape the remaining dough into a round and repeat.
  15. 15
Shape the last of the remaining dough by hand.
  16. 16
Bake biscuits for 10-14 minutes until golden brown, rotating the pan once during cooking.
  17. 17
    Cool slightly and serve.
