  • 1 c. thinly cut, fresh mushrooms
  • 3 Tbsp. finely cut green onions with tops
  • 1 clove garlic, crushed
  • 1/4 tsp. salt
  • 1 1/2 tsp. lemon juice
  • 1 1/2 tsp. Worcestershire sauce
  • 1/4 c. butter
  • 2 Tbsp. fresh, snipped parsley
  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • 8 beef tenderloin medallions (1/4-inch thick)

Directions

    Make sauce by sauteing garlic and onions in 1/4 cup butter. Add lemon juice and Worcestershire sauce and heat.

    Add parsley just before serving.

    When ready to serve, heat cast-iron skillet to medium heat and add butter and oil.

    Saute tenderloin medallions over medium-high heat for 3 to 4 minutes, until medium-rare.
