  • 1/2 pound leftover steak, cubed
  • 4 Tablespoons olive oil
  • 1/2 onion, sliced
  • 2 Tablespoons milk
  • 1 green bell pepper
  • 4 eggs, beaten
  • Salt and pepper to taste
  • 1 cup grated cheddar cheese
  • Corn or flour tortillas

    1. In a saucepan, heat two tablespoons of oil on high, then reduce the heat to medium and add the steak cubes. Next, add the eggs and milk, stirring rapidly to scramble them.

    2. Once the eggs begin to set (less than a minute), cover the saucepan set it aside on a low heat setting or off the heat entirely.

    3. In a second saucepan, heat up the other two tablespoons of oil and add the onions and peppers. Reduce heat, salt and pepper to taste, and let them cook until soft.

    4. Serve eggs, steak, and vegetable with hot tortillas and salsa.
