- 2 tablespoons olive oil
- 8 minute steaks
- 1 clove garlic crushed
- 15 ounces diced tomatoes
- 1/4 cup basil chopped, plus additional, sliced, to serve
- 1 teaspoon sugar
- 1/2 cup feta cheese finely diced
- salad Green, to serve
Directions

1Heat 1 tbsp of the oil in a large skillet on high heat.

2Season steak; cook 1-2 mins each side, or until cooked to desired doneness. Remove to a plate; cover with foil to keep warm.

3Heat remaining 1 tbsp oil on medium heat. Saute garlic 30 seconds. Add tomatoes; simmer 5-10 mins, until sauce has thickened. Stir in basil and sugar; season to taste.

4Add steaks; simmer, covered, 1-2 mins, until heated through.

5Transfer steak to plates. Spoon sauce over top and sprinkle with feta. Serve with a green salad.
