Ingredients

  • 3 c. water
  • 2 small onions, chopped
  • 3 ribs celery, chopped
  • 2 carrots, sliced
  • 30 oz. can tomatoes
  • 1 tsp. pepper
  • 1 (10 oz.) pkg. frozen mixed vegetables
  • 4 c. diced potatoes
  • 1 lb. ground beef or finely diced roast meat, browned and drained
  • 2 to 4 Tbsp. beef bouillon granules
  • 1/2 c. melted butter
  • 1/2 c. flour

Directions

    Place all ingredients except butter and flour in slow cooker. Cover and cook on low for 8 to 10 hours.

    One hour before serving, turn to high setting.

    Make a roux of melted butter and flour. Pour into soup and stir until thickened.
