Steamed Artichokes

Ingredients
- 6 large artichokes
- 2 chopped garlic cloves
- 4 Tbsp. olive oil
- 2 Tbsp. fresh chopped parsley
- 1/2 c. grated Pecorino Romano cheese
- salt and pepper
Directions

1Remove stems from artichokes so they will stand up. Snap off any leaves that are bruised or loose.

2Lay artichoke on its side and cut 1 inch off top.

3With scissors, trim each of leaf points. Place them in a large pot standing up.

4Spread open tops of artichokes with your hands.

5Individually sprinkle each artichoke with a little of each of the seasonings.

6Add about 1/2 inch of water in bottom of pan.

7Cover and steam for 1 hour.

8Artichokes are done when you pull out a leaf easily.

9Serve as an appetizer.
