- 1 lb carrots
- 1/2 tbsp extra virgin olive oil
- 1/2 tbsp parsley
Directions

1Cut off green top of carrots and discard/ compost.

2Scrub carrots under cold water.

3Place carrots on steamer in pan with water, but not submerging carrots.

4Steam until color darkens and carrots are tender, but firm.

5Remove to serving platter.

6Drizzle with olive oil.

7Garnish with flat leaf Italian parsley or even fresh mint.
