Steamed Carrots

  • 1 lb carrots
  • 1/2 tbsp extra virgin olive oil
  • 1/2 tbsp parsley

Directions

    Cut off green top of carrots and discard/ compost.

    Scrub carrots under cold water.

    Place carrots on steamer in pan with water, but not submerging carrots.

    Steam until color darkens and carrots are tender, but firm.

    Remove to serving platter.

    Drizzle with olive oil.
  7. 7
    Garnish with flat leaf Italian parsley or even fresh mint.
