- 1 teaspoon vegetable oil
- 2 chayote medium-sized, cut in fine strips, can substitute summer squash
- 1/2 serrano chili pepper finely chopped
- 1 tablespoon coriander minced
- salt as desired
Directions

1Preheat a large cooking pot on high and add the vegetable oil.

2Add the chayotes and serrano pepper once the vegetable oil is hot. Let it cook for 2 minutes.

3Stir the chayotes occasionally and add salt. Let it cook for 6 minutes on low with the cooking pot lid on.

4Add the coriander and let it cook for 1 minute.

5Turn off the stove and serve it directly on plates as soon as its ready.
