  • 1 teaspoon vegetable oil
  • 2 chayote medium-sized, cut in fine strips, can substitute summer squash
  • 1/2 serrano chili pepper finely chopped
  • 1 tablespoon coriander minced
  • salt as desired

Directions

    Preheat a large cooking pot on high and add the vegetable oil.

    Add the chayotes and serrano pepper once the vegetable oil is hot. Let it cook for 2 minutes.

    Stir the chayotes occasionally and add salt. Let it cook for 6 minutes on low with the cooking pot lid on.

    Add the coriander and let it cook for 1 minute.

    Turn off the stove and serve it directly on plates as soon as its ready.
