- 1 cup dry white wine
- None None Pinch of saffron threads
- 1 None red onion, chopped
- 1 tbsp butter
- 1 None red chili pepper, thinly sliced
- 1 None lime, peel cut into strips and lime juiced
- 4 lbs mussels, scrubbed and bearded
- None None Cilantro leaves and crusty bread, to serve
Directions

1Heat wine and saffron in a large saucepan on low heat, until just simmering.

2Add onion, butter, chili pepper, lime peel and juice, then top with mussels. Season well. Cover and simmer for 6-8 mins, shaking saucepan several times, until mussels open.

3Spoon mussels with cooking liquid into shallow bowls. Top with cilantro and serve with bread.
