- 2 lb. okra
- 1 medium sized onion
- 2 Tbsp. olive or salad oil
- 1 (14.5 oz.) can diced tomatoes
- 1 1/4 tsp. salt
- 1 1/4 tsp. sugar
- 1/2 tsp. pepper

1About 30 minutes before serving, trim stems from okra.

2Dice onion.

3In 12-inch skillet over medium-high heat in hot olive or salad oil, cook onion until tender.

4Stir okra, tossing to coat well.

5Add tomatoes with their liquid, salt, sugar, pepper and 1/2 cup water over high heat; heat to boiling.

6Reduce heat to low; cover and simmer 15 minutes or until okra is tender.

7Makes 8 accompaniment servings.
