- 50 okra pods
- 14 lb lean ham, chopped
- 1 cup beef stock
- 1 can stewed tomatoes
- salt and pepper
- 1 teaspoon butter
- 1 teaspoon flour
- 2 teaspoons chopped parsley
Directions

1Wash pods and cut off both ends.

2Put in a medium saucepan.

3Season to taste with salt and pepper.

4Simmer, covered for 40 minutes or so.

5Blend butter and flour and add to mixture.

6Cook slowly, stirring constantly, until thickened.

7Put in heated dish.
