Sticky Date Cake

  • 3 oz dried pitted dates (about 12)
  • 1 tsp baking soda
  • 2/3 cup, plus 1/2 cup packed brown sugar
  • 6 tbsp margarine
  • 2 None large eggs, at room temperature
  • 2/3 cup self-rising flour
  • 2 tsp cornstarch
  • 1 cup evaporated milk
  • 1/3 cup strawberries, halved

    Preheat oven to 350°F. Grease and line an 8-inch round cake pan with parchment.

    Place dates, baking soda, 2/3 cup brown sugar, margarine and 1 cup boiling water in the bowl of a food processor. Place lid on processor and let stand for 5 mins to soften dates.

    Process date mixture until dates are roughly chopped. Add eggs and flour. Process, scraping down side occasionally, for 30 seconds or until just combined. Pour mixture into prepared pan.

    Bake for 40-45 mins or until a skewer inserted at center comes out clean. Set aside to cool for 5 mins; transfer to a wire rack to cool.

    To make topping, place cornstarch in a small saucepan. Gradually whisk in evaporated milk until smooth. Stir in 1/2 cup brown sugar. Cook and stir over low heat for 5-7 mins until sauce boils and thickens. Cool slightly.

    Spread cake with topping. Decorate with strawberries.
