Stilton-Stuffed Dates

- 12 Medjool dates
- 2 ounces Stilton cheese, crumbled
- 6 pieces thick-cut smoked bacon
Directions

1Preheat oven to 375 degrees F.

2Make a lengthwise cut in each date and gently remove the pit, forming a pocket.

3Fill each date with 1/2 teaspoon cheese.

4Cut each piece of bacon in half by width.

5Take a strip of bacon and wrap it around each date, forming a slight overlap on the bottom (cut side up), and place on a rack within a sheet pan.

6Bake until bacon is crisp and cheese melts, about 25 minutes.

7Remove from oven and place on a paper towel-lined plate.

8Allow to cool slightly and serve.
