Stilton-Stuffed Mushrooms

- 2 Tbsp. melted butter
- 16 large mushrooms
- 2 Tbsp. freshly squeezed lemon juice
- 1 large egg
- 1/2 lb. Stilton cheese or other Blue cheese, crumbled
Directions

1Wash mushrooms and pat dry with a paper towel.

2Remove stems gently.

3In a bowl, toss mushrooms with lemon juice; drain.

4Add 2 tablespoons melted butter; toss with mushrooms.

5In a small bowl, beat the egg; add cheese.

6Spoon this into mushroom caps equally. Broil mushroom caps 8 to 10 inches from heat source for 5 to 6 minutes or until golden brown; remove.

7Use tongs to place on a serving platter.

8Serve hot.
