  • 1 medium red pepper, seeded and cut into small strips
  • 1 medium green pepper, seeded and cut into small strips
  • 2 medium zucchini, thinly sliced
  • 1 garlic clove, crushed
  • 1/4 c. vegetable oil
  • 1 tsp. crushed basil
  • 1 tsp. thyme
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 ears cooked corn

Directions

    Saute red and green peppers, zucchini and garlic in oil for about 5 minutes.
