  • 1/3 lb. cooked lo mein noodles
  • 1/2 c. lean meat (pork, beef or chicken), shredded
  • 1/2 Tbsp. cornstarch
  • 1/2 Tbsp. cooking wine or sherry
  • 1/2 Tbsp. soy sauce
  • 6 each 1/2-inch pieces green onion
  • 3 Tbsp. oil
  • 1/3 c. bamboo shoots (fresh or canned)
  • 3 Tbsp. carrot
  • 3 Tbsp. presoftened mushrooms
  • 1/4 lb. spinach
  • 1/2 c. stock
  • 1 Tbsp. soy sauce
  • 1/2 tsp. salt
  • dash of pepper

Directions

    Cook the noodles as directed on package.

    One-third pound dried noodles equals one pound cooked noodles.

    Add cornstarch, cooking wine and 1/2 teaspoon of soy sauce to the meat and marinate for 20 minutes.

    Tear the spinach into 2-inch pieces.
