Ingredients

  • 3 to 4 slices bacon
  • 1/2 c. chopped onion
  • 1 c. rice, cooked
  • 3 Tbsp. soy sauce
  • 1 pkg. fried rice seasoning mix
  • 1 egg, beaten
  • 1 c. peas and carrots

Directions

    Cook 1 cup rice according to package directions; set aside. In large skillet or wok, fry bacon, then remove.

    Add chopped onion and fry 1 to 2 minutes until done. Add the cooked rice all at once and stir-fry.

    Add soy sauce and seasoning mix.

    Stir. Push rice to side of pan.

    Scramble egg in pan, then stir in with rice.

    Crumble in bacon.

    Add peas and carrots and cook until heated through.
