Stir-Fried Spinach

- 1 lb. fresh Spinach
- 1 tsp. fresh Garlic, crushed
- 1/8 tsp. ground Black Pepper
- 2 tsp. Lemon Juice
Directions

1Thoroughly wash the spinach and remove all tough stems. Shake off any excess water, but do not dry completely.

2Set aside. Coat a large skillet with nonstick cooking spray, and preheat over medium-high heat.

3Add the garlic, and stir-fry for 30 seconds.

4Add the spinach and pepper, and stir-fry for about 2 min., or just until the spinach is wilted and tender.

5Remove the skillet from the heat, and toss in the lemon juice.

6Serve hot.
