"Strasbourg" Wurst Salad

  • pinch of salt
  • pinch of sugar
  • 2 to 3 Tbsp. wine vinegar
  • 3 to 4 Tbsp. salad oil
  • 1/4 lb. bologna, cut into thin strips
  • 1/2 lb. Swiss cheese or mild Cheddar, cut into thin strips
  • 1 medium onion, quartered and thinly sliced
  • coarsely ground black pepper

    Combine the salt, sugar and vinegar; pour in the oil and whisk vigorously to make a smooth dressing.

    Add the bologna and cheese, plus the onion and let stand for at least 30 minutes.
