Strawberry Bread

Ingredients

  • 1 c. crushed fresh strawberries or 1 (10 oz.) pkg. frozen, thawed and drained
  • 1/2 c. softened butter
  • 1 c. sugar
  • 1/2 tsp. almond extract
  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 c. flour

Directions

    In a bowl, beat together butter, sugar and almond extract until mixture is light and creamy.

    Separate eggs and set the whites aside.

    Beat the egg yolks into the batter and set aside. In another bowl, sift flour, soda, baking powder and salt.

    Add the dry ingredients to the batter alternately with strawberries. Beat the egg whites until stiff and fold into the batter.

    Pour the batter into a loaf pan and bake at 350° for 50 to 60 minutes or until bread tests done.

    Let it cool in the pan, then turn it out on a rack to finish cooling.

    Makes 1 loaf.
