Strawberry Bread (Cake)

Ingredients

  • 3 c. flour
  • 1 tsp. salt
  • 1 1/2 c. sugar
  • 1 1/4 c. oil
  • 1 tsp. baking soda
  • 1 Tbsp. cinnamon
  • 4 beaten eggs
  • 1 1/2 c. cut up strawberries (fresh; if you use frozen, thaw and drain)
  • 1/2 c. chopped nuts (optional)

Directions

    Preheat oven to 350°.

    Combine dry ingredients.

    Combine beaten eggs and oil. Blend the dry ingredients and egg mixture until just moistened. Fold in strawberries and nuts.

    Bake in 2 greased and floured 9 x 5-inch loaf pans or 1 large pan.

    Bake for 50 to 60 minutes. Check for doneness.

    Let cool. Delicious and can be frozen!
