- 2 pkg. (8 oz. each), plus 1 (3 oz.) pkg. cream cheese, softened
- 1 c. sugar
- 2 tsp. grated lemon peel
- 1/4 tsp. vanilla
- 3 eggs
- 9 to 10-inch graham cracker pie crust
- Strawberry Glaze (recipe follows)
Directions

1Heat oven to 300°.

2Beat cream cheese in large mixer bowl. Add sugar gradually, beating until fluffy.

3Add lemon peel and vanilla.

4Beat in 1 egg at a time.

5Pour over graham cracker crust.

6Bake until firm, about 1 hour.

7Cool to room temperature. Refrigerate at least 3 hours, but no longer than 10 days.

8Top with Strawberry Glaze.
