- 1/2 cup butter
- 2 3/8 tablespoons sugar castor
- 15/16 cup flour
- 3 3/8 tablespoons milk fresh
- 1 egg
- 1 teaspoon vanilla essence
- 1 teaspoon baking powder
- 200 cups strawberry jam gm/1
- 7 tablespoons unsalted butter
- 2 eggs
- 3/4 cup sugar
- 1 1/4 cups desiccated coconut
- 4 1/2 tablespoons flour
Directions

1Beat butter and sugar until fluffy .

2Add in egg and vanilla essence and beat further.

3Mix baking powder with flour .

4Fold in the flour and milk alternatively into the batter bit by bit .

5Grease a pan with parchment paper for easy handling.

6Spread the base mixture in the pan.

7Beat the butter with sugar until fluffy.

8Add in eggs one at a time.

9Add in desiccated coconut and flour and beat until all are well incorporated.

10Drop spoonful of coconut topping on top of the jam mixture until you cover the whole filling.

11Do not spread it because then the jam will mix in with the coconut mixture.

12Preheat oven at 180C and bake for 20-25mins.

13Leave to cool slightly before cutting into slices .
