Strawberry Freezer Spread

Ingredients

  • 6 c. frozen unsweetened strawberries, thawed and crushed
  • 1 tsp. lemon juice
  • 1/2 pkg. powdered fruit pectin
  • 1/4 tsp. salt
  • 1 Tbsp. unflavored gelatin
  • 1/4 c. cold water
  • 2 Tbsp. Sugar Twin

Directions

    Combine half of crushed strawberries, the lemon juice, pectin and salt in large saucepan.

    Bring to full boil; boil hard 1 minute.

    Remove from heat; stir in remaining strawberries.

    Add gelatin to water in a small saucepan; let stand 5 minutes. Dissolve gelatin over low heat.

    Mix dissolved gelatin and Sugar Twin into strawberry mixture; cool slightly.

    Put mixture into freezer containers, leaving 3/4-inch space at top for fruit to expand; cover.

    Store in freezer.

    To thaw, place containers in fridge for 24 hours before using.

    Use within 10 days of thawing.
