Strawberry Macaroon

Ingredients

  • 1 pkg. (1 lb. 3 oz.) yellow cake mix
  • 1 large egg
  • 1/4 c. water
  • 1/4 c. shortening
  • 3 1/2 oz. pkg. (1 1/3 c.) flaked coconut
  • 1 c. heavy cream or 1 container Cool Whip, etc.
  • 1 qt. fresh strawberries, sliced and sweetened

Directions

    Combine cake mix, egg, water, shortening and 1 cup of coconut. Mix well (mixture will be very thick) and pat into greased 13 x 9-inch pan.

    Bake at 350° for 18 to 20 minutes.

    Cool whipped cream and fold in the strawberries.

    Spread over the baked coconut mixture.

    Top with remaining coconut.
