Strawberry Mousse

- 1 1/2 Tbsp. powdered gelatin
- 1 lb. strawberries
- 1 3/4 to 2 c. or less sugar
- 6 egg whites
- 2 c. heavy cream
- 2 Tbsp. cognac
Directions

1Sprinkle gelatin in 1/4 cup of cold water to soften.

2Meanwhile cook strawberries and sugar over a low heat for 15 minutes, until thickened.

3Remove from heat and add softened gelatin, mixing well. Cool this mixture completely.

4Stiffly beat egg whites.

5In another bowl whip the cream and cognac together.

6Stir gelatin mixture with the cream, then fold in the egg whites.

7Mix well and chill. Serves 10.
