Strawberry Preserves

- 4 c. fresh strawberries
- 3 tsp. lemon juice or 1/4 tsp. cream of tartar
- 5 c. sugar
Directions

1Place in a wide kettle alternate layers of sugar and berries. Bring slowly to a boil.

2After the whole mass is boiling, cook 9 minutes.

3Remove from heat.

4Add the lemon juice or cream of tartar.

5Let stand overnight.

6The second day, boil for 9 minutes. Allow to cool; place in sterilized jars.

7Seal with paraffin. Cooked this way, the preserves are beautiful and tender.

8Jelly surrounds the plump, bright berries.
