Strawberry Roll

  • 1 c. flour
  • 3 eggs
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 pkg. frozen sweetened strawberries
  • 1 carton whipping topping
  • powdered sugar
  • 1/3 c. orange juice

Directions

    Beat eggs and sugar until light yellow.

    Combine flour and baking powder.

    Add to egg mixture gradually, alternating with orange juice.

    Line 10 1/2 x 15 1/2-inch jelly roll pan with waxed paper.

    Pour in batter. Bake 12 to 15 minutes in oven preheated to 375°.

    Loosen edges of cake and sprinkle lightly with powdered sugar.

    Turn out on towel and roll cake and towel together; cool. Thirty minutes before serving, unroll and peel off waxed paper. Spread with whipped topping.

    Spoon on strawberries.

    Roll up loosely.

    Cut in 1-inch slices with serrated knife.
