Strawberry Roll

Ingredients

  • 4 eggs
  • 3/4 c. sugar
  • 3/4 c. sifted flour
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • confectioners sugar
  • 1 c. heavy cream, whipped
  • 2 c. fresh strawberries, sliced
  • whole strawberries for garnish

Directions

    Beat eggs until foamy.

    Beat sugar until very thick and light colored.
  3. 3
    Fold in sifted dry ingredients.

    Bake on greased cookie sheet lined and greased again.

    Turn out on towel dusted well with confectioners sugar.

    Roll up and cool a few minutes.

    Unroll and spread with whipped cream.

    Sprinkle sliced strawberries on and roll as jelly roll.

    Refrigerate for 1 hour.

    Just before serving, garnish with whole strawberries.
