Strawberry Soup

  • 3 pt. fresh strawberries
  • 1 c. orange juice
  • 1 1/4 tsp. instant tapioca
  • 1/8 tsp. cinnamon
  • dash of nutmeg
  • 1/2 c. sugar
  • 1 tsp. grated lemon peel
  • 1 Tbsp. lemon juice
  • 1 c. buttermilk or plain yogurt

    Slice 6 strawberries and reserve.

    Puree remaining berries in processor or blender.

    Strain into 4-quart saucepan.

    Add orange juice.

    In small bowl, mix tapioca with 4 tablespoons pureed berry mixture.

    Add to saucepan with cinnamon and nutmeg.

    Heat, stirring constantly, until comes to a boil. Cook 1 minute at medium heat or until thick. Remove from heat.

    Pour into large bowl. Add sugar, lemon peel and juice and buttermilk. Blend well. Fold in sliced berries. Cover and chill at least 8 hours. Serve with lemon garnish. Can be prepared 3 days ahead.
