Ingredients
- 5 medium granny smith apples, cored, skinned, and sliced a 1/4 inch thick
- 2 large gala apples, cored, skinned, and sliced 1/4 inch thick
- 2 12 tablespoons lemon juice
- 13-12 cup brown sugar
- 13 cup sugar
- 2 12 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 1 14 teaspoons ground cloves
- 2 -3 teaspoons white vinegar
- 1 egg
- 1 23-2 cups half white flour and half wheat flour
- 1 teaspoon salt
- 2 tablespoons brown sugar
- 12 cup butter, chilled and cubed
- 12 teaspoon sugar
- 12-1 cup ice water (to moisten the dough)
- 12 cup white flour
- 12 cup wheat flour
- 12 cup brown sugar (or more, depending on your taste)
- 12 cup sugar
- 3 -4 teaspoons cinnamon
- 1 12 teaspoons nutmeg
- 1 12 teaspoons allspice
- 1 12 teaspoons cloves
- 14-12 cup very finely crushed nuts (I used hazelnuts, pecans, almonds, and walnuts)
- 1 teaspoon baking soda
- 12 cup butter, chilled and diced
Directions

1BAKING INSTRUCTIONS: (see separate components below).

2Preheat the oven to 375 degrees farenheit.

3Assemble the pies and set into the middle rack.

4Bake for approximately 1 hour or so; until the crust and streusal are browned and the apples are soft.

5Serve with vanilla ice cream or whipped cream, warm or cold ( I prefer warm).

6FOR THE CRUST:.

7Add all the dry ingredients together in a decent-sized bowl.

8Cut/add in the butter and mix with fingertips until crumbly.

9Knead slightly and add as much ice water as neccesary to moisten the dough (tbsp by tbsp).

10Roll out on a floured surface until 1/2-1/4 inch thick and lay over a pie pan (fluting the edges if desired), brush the sides with honey.

11Chill until needed.

12FOR THE FILLING:.

13Cut the apples accordingly and add all ingredients ,except for the egg, in a large bowl.

14Mix well and let sit for 5-6 minutes.

15Spoon apples only into pie dough, spreading evenly and set aside.

16Whisk the egg with the remaining juices and spoon a 1/4 cup or so over the pies.

17Chill until needed.

18FOR THE STREUSAL:.

19Sift together all the dry ingredients and mix well.

20Cut in the butter and rub with fingertips until semi-clumpy and sandy.

21Sprinkle over pies evenly.
