- 2 Tbsp. olive oil
- 1 medium sliced onion
- 1 1/2 lb. fresh string beans, cut up
- 1/2 c. chopped fresh parsley
- 1 large can cooking tomatoes
- 8 oz. tomato sauce
- 1 tsp. garlic powder
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 6 oz. Ricotta cheese
- 3 c. cooked brown rice
Directions

1Heat olive oil in heavy skillet.

2Saute onion, string beans and parsley until onion becomes translucent.

3(You may want to steam beans for about 5 minutes if you like them less crisp.)

4Add tomatoes and sauce, then seasonings and stir.

5Cook over medium heat for 10 minutes.

6Add Ricotta cheese and mix well.

7Cook over low heat for another 10 minutes.

8Pour over brown rice and serve.
