String Bean Ricotta

Ingredients

  • 2 Tbsp. olive oil
  • 1 medium sliced onion
  • 1 1/2 lb. fresh string beans, cut up
  • 1/2 c. chopped fresh parsley
  • 1 large can cooking tomatoes
  • 8 oz. tomato sauce
  • 1 tsp. garlic powder
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 6 oz. Ricotta cheese
  • 3 c. cooked brown rice

Directions

    Heat olive oil in heavy skillet.

    Saute onion, string beans and parsley until onion becomes translucent.

    (You may want to steam beans for about 5 minutes if you like them less crisp.)

    Add tomatoes and sauce, then seasonings and stir.

    Cook over medium heat for 10 minutes.

    Add Ricotta cheese and mix well.

    Cook over low heat for another 10 minutes.

    Pour over brown rice and serve.
