Stuffed Artichokes

Ingredients
- 8 medium artichokes
- 1/2 lb. boiled ham, cut up
- 1 c. water
- 1 egg
- 1/2 tsp. salt
- 1/2 tsp. ground pepper
- 1 1/2 c. seasoned bread crumbs
- 1/2 c. oil
- 4 Tbsp. parsley
- 2 Tbsp. Parmesan cheese
Directions

1Cut stems and tips off artichokes and remove all small leaves around the stem at the bottom.

2Mix in a bowl the ham, salt, pepper, oil, water, egg, parsley, cheese and bread crumbs together until moist.

3Press artichokes on a hard surface so the leaves spread open a little. Fill the center of the artichokes and in each leaf.

4Place in a saucepan with enough water to cover artichokes halfway.

5Cook slowly for about 40 minutes until tender.

6May be eaten hot or cold.
