Stuffed Artichokes

Ingredients

  • 4 artichokes
  • 1/4 c. Parmesan cheese
  • 2 c. flavored breadcrumbs
  • 1/4 tsp. garlic powder
  • 4 tsp. oil (any kind)
  • 1 Tbsp. lemon juice

Directions

    First remove stem and cut off top of artichoke to make flat. Use scissors to remove any remaining tips on leaves.

    Rinse under cold water while spreading leaves slightly.

    Turn upside down to drain.

    Mix breadcrumbs, Parmesan cheese and garlic together. Using spoon, stuff in between each leaf completely stuffing the artichoke.

    Place about 1 1/2 inches of water covering bottom of pot.

    Add lemon juice.

    Place artichokes in pot with cover.

    Pour 1 teaspoon of oil on top of each artichoke.

    Bring to a boil, then simmer about 45 minutes to 1 hour.

    Check to make sure water has not evaporated.
