  • 1 large head green cabbage
  • 1 Tbsp. salt
  • 1 c. chopped onion
  • 1 clove garlic, crushed
  • 1 lb. ground beef
  • 2 c. cooked rice
  • 1/4 tsp. pepper
  • 2 eggs, beaten
  • 1 (8 oz.) can tomato sauce
  • 1 (14 to 16 oz.) chopped tomatoes
  • juice of 1 lemon
  • 2 Tbsp. brown sugar

    Cook rice. Add 12 cabbage leaves to 1 teaspoon salt/boiling water; let stand 5 minutes. Drain. Combine onions, garlic, meat, rice, eggs, pepper and 1 teaspoon salt. Place mound of meat mixture (1/2 cup) in hollow leaf; roll up, placing seam side down, single layer in lightly greased 13 x 9 pan. Combine, then pour sauce, tomatoes, lemon juice, 1 teaspoon salt, 1/4 teaspoon pepper and sugar over cabbage rolls. Cover and bake at 375° for 50 minutes and uncovered for 10 minutes. Makes 8 servings.
