Stuffed Cabbage Rolls

- 8 cabbage leaves, wilted in boiling water
- 1 lb. ground beef
- 1/2 c. cooked rice
- 1 tsp. dried minced onion
- 1 egg
- 1/2 tsp. poultry seasoning
- 1 (8 oz) can tomato sauce
- 1 1/2 tsp. light brown sugar
- 2 Tbsp. lemon juice or vinegar
- 2 Tbsp. water
Directions

1In a large saucepan on the conventional range top surface unit bring 6 cups of water and 1 teaspoon of salt to boiling point.

2Add 8 cabbage leaves; simmer about 2 or 3 minutes, just long enough to make leaves pliable.

3Drain leaves on paper towels.

4Cook beef in a glass utility dish using microwave for 4 minutes.

5Mix together lightly, in a medium-size mixing bowl, ground beef, cooked rice, minced onion, egg and poultry seasoning.

6Form meat mixture into 16 even balls.

7Cut the core out of the cabbage leaf.

8Fill the center of each cabbage leaf with 2 meat balls.

9Fold 2 sides of leaf over meat balls and roll up leaves from the end.

10Arrange cabbage rolls, seam side down in a 2-quart glass utility dish.

11Combine tomato sauce, brown sugar, water and lemon juice or vinegar together in 2-cup glass measuring cup or small mixing bowl.

12Pour over cabbage rolls.

13Place wax paper over dish.

14Cook with microwave 10 minutes. Allow cabbage rolls to stand 10 minutes with covering before serving.

15Recipe yields 8 servings.
