- 1 Tbsp. vegetable oil
- 1 lb. stew meat, cut into 1-inch chunks
- 1 (1 lb.) pkg. coleslaw mix
- 1 large onion, chopped
- 2 (14 oz.) cans stewed tomatoes
- 2 (14 oz.) cans beef broth
- 1 c. water
- 1/2 c. brown sugar
- 1 Tbsp. lemon juice
- 1 tsp. salt
- 1/3 c. rice, uncooked
Directions

1Heat oil in 6-quart pot.

2Add beef chunks; brown about 6 minutes.

3Add coleslaw mix and onion.

4Cook, covered, for 4 minutes, stirring after about 2 minutes of cooking.

5Add tomatoes, beef broth, water, brown sugar, lemon juice and salt.

6Bring to a boil.

7Add rice; reduce to a simmer.

8Cover; cook 45 minutes.
