  • 1 1/2 lb. pitted dates
  • 3/4 c. powdered sugar
  • 1/4 c. butter or margarine, softened
  • dash of salt
  • 1/2 tsp. grated orange rind
  • 1/3 c. finely chopped walnuts
  • few drops of vanilla extract (optional)
  • powdered sugar

Directions

    Cut one side of dates with a knife; spread apart.

    Cream sugar, butter and salt until very light and fluffy.
  3. 3
    Add orange rind, nuts and extract.

    Stuff each date generously, then press 2 whole dates together to make one, and roll each in powdered sugar. Let stand several hours before serving.

    Yields about 4 dozen.
