- 1 eggplant, cooked and mashed
- 1/4 c. onion, chopped
- 1/4 c. green pepper, chopped
- 1/4 c. celery, chopped
- 1 clove garlic, chopped
- 1 tsp. sage
- 1 egg
- 6 slices stale bread, soaked in milk
- 1/4 to 1/2 lb. bacon, fried crisp and crumbled
- Italian cheese
Directions

1Cut up and fry bacon strips; saute all vegetables.

2Fry bread until dried out.

3Mix bacon, eggplant and sauteed vegetables. Mix with egg and cheese.

4Bake at 300° until brown.
