  • 1 eggplant, cooked and mashed
  • 1/4 c. onion, chopped
  • 1/4 c. green pepper, chopped
  • 1/4 c. celery, chopped
  • 1 clove garlic, chopped
  • 1 tsp. sage
  • 1 egg
  • 6 slices stale bread, soaked in milk
  • 1/4 to 1/2 lb. bacon, fried crisp and crumbled
  • Italian cheese

    Cut up and fry bacon strips; saute all vegetables.

    Fry bread until dried out.

    Mix bacon, eggplant and sauteed vegetables. Mix with egg and cheese.

    Bake at 300° until brown.
