Stuffed Eggplant

Ingredients
- 2 medium eggplants
- 1 1/2 lb. ground beef
- 1/4 c. chopped green peppers
- 1/4 tsp. Tabasco sauce
- 1 1/2 c. cooked rice
- 1/4 c. oil
- 1/4 c. chopped onion
- 1/4 clove garlic, chopped
- 1 tsp. salt
- 1 tsp. lemon juice
Directions

1Slice eggplants in half; scoop out some of the inside and chop.

2Heat oil in skillet and add eggplant pieces, beef, onion, peppers, garlic, Tabasco and salt.

3Saute until eggplants are lightly browned.

4Toss in rice and blend all ingredients.

5Stuff eggplant halves with filling.

6Place stuffed halves skin down in greased baking dish.

7Bake in 375° oven for 30 minutes.

8Makes 4 servings.

9You may stuff some green peppers with some of the filling if desired.
