Stuffed Eggplant

Ingredients

  • 2 medium eggplants
  • 1 1/2 lb. ground beef
  • 1/4 c. chopped green peppers
  • 1/4 tsp. Tabasco sauce
  • 1 1/2 c. cooked rice
  • 1/4 c. oil
  • 1/4 c. chopped onion
  • 1/4 clove garlic, chopped
  • 1 tsp. salt
  • 1 tsp. lemon juice

Directions

    Slice eggplants in half; scoop out some of the inside and chop.

    Heat oil in skillet and add eggplant pieces, beef, onion, peppers, garlic, Tabasco and salt.

    Saute until eggplants are lightly browned.

    Toss in rice and blend all ingredients.

    Stuff eggplant halves with filling.

    Place stuffed halves skin down in greased baking dish.

    Bake in 375° oven for 30 minutes.

    Makes 4 servings.

    You may stuff some green peppers with some of the filling if desired.
