Stuffed Eggplant

Ingredients

  • 1 large eggplant
  • 3 Tbsp. green pepper
  • 1/2 c. celery
  • 1/4 c. onion
  • 3/4 lb. ground beef
  • 1 c. soft bread crumbs
  • 2 Tbsp. butter
  • 1 egg
  • 1 Tbsp. water
  • 1 tsp. salt
  • pepper
  • paprika
  • grated cheese

Directions

    Scoop middle out of eggplant.

    Save shell halves.

    Saute pepper, celery and onion in butter. Add raw diced eggplant.

    Add ground beef. Add bread crumbs, egg and a little water.

    Salt and pepper to taste.

    Put mixture in shell of eggplant and bake at 350° for 45 minutes to one hour.

    Top with grated cheese.
