Stuffed Eggplant

Ingredients
- 2 or 3 eggplant
- 1 lb. hamburger meat
- 1/2 c. onion, chopped
- 1/4 c. bell peppers, chopped
- 1/4 c. celery, chopped
- a few Tbsp. cooking oil
- salt and pepper to taste
- 1/4 tsp. garlic powder
- 1 can tomatoes or Ro-Tel tomatoes
- corn bread recipe, broken up
Directions

1Cut eggplant in 1/2 lengthwise.

2Scoop out inside of eggplant, leaving outsides in which to put stuffing.

3Cut meat of eggplant in 1-inch cubes.

4Cook in boiling, salted water until tender, about 10 to 15 minutes; drain.

5Mash with fork.

6Saute onions, peppers and celery in oil until tender, but not brown; add meat.

7Brown lightly.

8Add mashed eggplant; stir.

9Add salt, pepper, garlic powder, tomatoes and corn bread; mix thoroughly.

10Stuff mixture into eggplant hulls.

11Bake at 300° for about 45 minutes.
