- 2 eggs, beaten
- olive oil
- 1/2 lb. sliced Mozzarella cheese
- 1 lb. Ricotta cheese, mixed with 1 Tbsp. finely chopped parsley
- 2 c. marinara sauce
Directions

1Wash eggplant, remove stems, peel and slice.

2Dredge eggplant in flour, dip in beaten eggs and fry until golden brown.
