  • 2 medium eggplants
  • 2 eggs, beaten
  • olive oil
  • 1/2 lb. sliced Mozzarella cheese
  • 1 lb. Ricotta cheese, mixed with 1 Tbsp. finely chopped parsley
  • 2 c. marinara sauce

Directions

    Wash eggplant, remove stems, peel and slice.

    Dredge eggplant in flour, dip in beaten eggs and fry until golden brown.

    Pat dry.
