Stuffed Eggplant Rolls

- 2 medium eggplant
- bread crumbs
- 2 eggs, beaten
- olive oil (for frying)
- 1 lb. Ricotta, mixed with 1 Tbsp. chopped parsley
- 1/2 lb. Mozzarella cheese
- 1 (16 oz.) marinara or spaghetti sauce
Directions

1Peel eggplant.

2Slice lengthwise.

3Dip slices into egg, then bread crumbs.

4Fry until golden.

5Lay on paper towels.

6Place a scoop of Ricotta in middle of each eggplant slice.

7Top with slice of Mozzarella, then roll eggplant.

8Secure with toothpicks.

9Place eggplant in greased, shallow baking pan.

10Top with sauce.

11Bake in 350° oven for 15 to 30 minutes.

12Yields 8 to 10 servings.
