- 2 medium onions, chopped
- 1 Tbsp. butter or margarine
- 2 lb. fillets, thawed
- 1 can meatless spaghetti sauce
- 1 lb. fresh spinach or 1 pkg. frozen, cooked and drained
Directions

1Cook the onions in the butter until tender but not brown. Spread each fillet with cooked spinach.

2Sprinkle with the onions. Roll up and place in a shallow, buttered baking dish.

3Top with the spaghetti sauce.

4Bake at 400° for about 20 minutes, or until fish is flaky when tested with fork.

5A nice finish is a dusting of grated cheese over the top, with a minute or two under broiler to melt it a bit.

6Serves 4.
