- 1 each calves liver
- 1 x bread stuffing recipe
- 3 each salt pork strips
- 1 x flour, all-purpose
- 1 x salt and black pepper
Directions

1Wash the liver in cold salted water and dry well.

2Make an incision in the thickest part, using a sharp knife.

3Fill with bread stuffing.

4Season well with salt and pepper and dredge with flour.

5Place in roasting pan and place strips of salt pork on top.

6Add a little water and roast at 450F (230C) for 15 minutes.

7Reduce heat to 350F (180C) F and continue cooking for 45 minutes.

8Serve with cooked spinach and baked potatoes.
