Stuffed Mushrooms

Ingredients

  • 12 to 16 large mushrooms
  • 1/2 lb. mushrooms (any size)
  • 3 lb. butter
  • 2 green onions, finely minced (white and green part)
  • salt and pepper
  • 6 oz. cream cheese, softened
  • 2 Tbsp. minced dill (dried or fresh)
  • 2 Tbsp. grated Parmesan

Directions

    Twist off stems of large mushrooms.

    Set aside the caps. Mince stems, 1/2 pound mushrooms and green onions.

    Heat them with butter on medium-high heat until all water is boiled away.

    Add cream cheese, dill and Parmesan and blend mixture well.

    Place large mushroom caps on cookie sheet and stuff with mixture.

    Broil until browned and bubbly.
